Mediterranean tuna and giant couscous salad

I just love the summer and outdoor picnics lazy on a blanket in the sun, watching the children playing wonderful.

Serves 2

Ingredients
150g LOVE Life Giant Wholegrain Couscous 1 tbsp olive oil 1 tbsp Cooks’ Ingredients Sun Dried Tomato Paste Squeeze lemon juice 70g pack Waitrose Wild Rocket 100g cherry tomatoes, quartered 6cm piece cucumber,halved, deseeded and thinly sliced 80g can John West Tuna Infusions Chilli & Garlic 2 salad onions, thinly sliced

Method

1. Cook the couscous in a large pan of boiling water for 6–8 minutes until tender. Drain well.

2. Mix together the olive oil, sun dried tomato paste and lemon juice. Drizzle over the couscous and set aside to cool, then chill until ready to serve.

3. Toss together the dressed couscous, rocket leaves, cherry tomatoes and cucumber. Divide between 2 serving plates and top with the tuna and salad onions.

Cook’s tip

Giant couscous has a lovely texture but regular couscous or cooked small pasta shapes would work well here too.
