NUT ROAST
Never sure if I like Nut roasts, but as its Sunday and the last day of vegetarian week I thought this would be a good idea. Let me know if you try it, would love to hear you if you like it.

NUT ROAST
serves 4
1 medium sized onion
25 g ( 1oz ) butter or margarine
225 g ( 8oz ) mixed nuts, i.e. peanuts,walnuts,cashews etxc.
100 g ( 40z ) wholemeal bread
300 ml (1/2 pt) vegetable stock or water
10 ml (2 tsp ) yeast extract
5 ml ( 1 tsp) mixed herbs
salt and pepper to taste
Chop the onions and saute in the butter until transparent.
Grind the nuts and bread together in a liquidizer until quite fine.
Heat the stock and yeast extract to boiling point, then combine all the ingredients together and mix well-the mixture should be fairly slack.
Turn into a greased shallow baking dish, level the surface, sprinkle with a few breadcrumbs, and Bake in the oven at 180 c (350 F / mark 4 ) for 30 minutes, until golden brown.
Garnish with fried onion rings, if you wish.
