GUERNSEY GACHE

As promised here is the first recipe out of seven traditional Guernsey foods I have selected.

Gache (pronounced 'gosh') is a traditional Guernsey fruit bread. Although yeast is used in the gache recipe, the loaf has a crumbly cake like consistency. It is especially delicious served with Guernsey butter.

HERE IS THE RECIPE

Ingredients:

  • 500g plain flour

  • 225g Guernsey butter

  • 150ml Guernsey milk

  • 30g dried yeast

  • 300g sultanas

  • 50g mixed peel

  • 1 teaspoon of sugar

  • Pinch of salt

Method:

  1. Sift flour and sugar into a bowl, and then stir in yeast.

  2. Rub the butter into the dry ingredients to form a breadcrumb-like mixture.

  3. Stir in the sugar, mixed peel and sultanas.

  4. Warm up the milk, then stir it into the mixture and knead into dough.

  5. Transfer into a loaf tin and bake for between 45 minutes and an hour in a medium oven, until the top is golden brown.

  6. Serve with a generous spreading of Guernsey butter
