GUERNSEY GACHE
As promised here is the first recipe out of seven traditional Guernsey foods I have selected.
Gache (pronounced 'gosh') is a traditional Guernsey fruit bread. Although yeast is used in the gache recipe, the loaf has a crumbly cake like consistency. It is especially delicious served with Guernsey butter.
HERE IS THE RECIPE
Ingredients:
500g plain flour
225g Guernsey butter
150ml Guernsey milk
30g dried yeast
300g sultanas
50g mixed peel
1 teaspoon of sugar
Pinch of salt
Method:
Sift flour and sugar into a bowl, and then stir in yeast.
Rub the butter into the dry ingredients to form a breadcrumb-like mixture.
Stir in the sugar, mixed peel and sultanas.
Warm up the milk, then stir it into the mixture and knead into dough.
Transfer into a loaf tin and bake for between 45 minutes and an hour in a medium oven, until the top is golden brown.
Serve with a generous spreading of Guernsey butter
